Mk3 Golf Interior Trim Replacement

I'm replacing the interior trim on my Mk3 Golf and was wondering if anyone has done this before. Specifically I'm looking to replace the dashboard trim pieces with some nice leather or alcantara inserts. Any advice on how to do it properly would be great, as well as any recommendations for materials and tools needed.
