What's the best engine to choose for a W116 restoration?

I'm planning to restore my W116 and I'd love to get some input on the best engine to choose. Should I go with a original 280SEL M110, a upgraded 350SE M117 or perhaps something more modern like a 300SDL M103? What's the consensus among the community?
