Restoring a 1971 New Yorker Convertible - Seeking Advice

I'm restoring my grandfather's 1971 New Yorker Convertible and need some guidance. The previous owner allegedly rebuilt the engine, but I'm concerned it may have been done poorly. I've also got issues with the carburetor and transmission. Has anyone worked on a similar project? Any advice or suggestions would be greatly appreciated.
